    Red Verjus is a wine friendly alternative to vinegar. Verjus (pronounced "Veyr-Joo") originated in Roman times and was a staple of Parisian kitchens during the 14th and 15th centuries. Made from the juice of unfermented wine grapes, use it as a gentle acid wherever you might find lemon juice or vinegar too tart - which means whenever you want the gentlest bite of flavor. Use it in sauce reductions, salad dressings, desserts and more. Red Verjus can also be substituted for red wine vinegar or used for marinating. It is particularly good in sauces for meat or spicy foods. Many recipes also utilize Verjus in salad dressings. A quick online search will give you lots of great recipes for this tart, non-alcoholic grape juice. Fusion Red and White Verjus were created by Jim Neal, a young chef in California's Napa Valley from a blend of the areas' grapes. Now, from San Francisco to New York, many of America's great chefs now have Fusions' Verjus on their minds.
