The exquisite fragrance of some flowers is spoiled by heat. Sometimes, the fragrant molecules are too large to be extracted using steam distillation. In either case, the essence from flower petals can still be obtained by solvent extraction. This method initially produces a waxy substance known as a concrete, which is then further processed into a thick and concentrated 'absolute'. Absolutes often tend to be aromatically stronger than essential oils, so using less is recommended.
