Spelt is an ancient wheat dating back over 8000 years. Spelt has a nutty and slightly sweet flavor and because of its high water solubility, it nutrients are quickly absorbed by the body.
 
 
 While it's not gluten free, it is higher in protein and fiber making it easier to digest. The extra fiber aids in the digestion of gluten.
