Botanical Name: Manihot utilissima Pohl.Suggested Uses: Soak the pearls before using by covering with water for about 2 hours; drain. 4 Tbsp of soaked pearl tapioca is equal to 1 1/2 Tbsp of instant, "minute" tapioca.Origin: BrazilProcessing Notes: Tapioca pearls are made from the starch or flour that is obtained by grinding the tubers of the Cassava plant, Manihot utilissima (also known as Manihot esculenta). After grinding, a slurry is created, and then centrifuged, to separate the starch from the water and plant juices. The moist starch is placed in vats and centrifuged a second time to remove moisture. Because it is essential that no moisture remain, the starch is transferred into drying ovens in a final attempt to eliminate all traces of dampness. When all stages of the drying process are complete, the starch is placed in a tumbling machine. The tumbling motion of the machine produces tapioca pearls.Kosher: KSA CertifiedNutrition FactsServing Size Approx. 1 Tbsp (10.0g)Servings 45Amount Per Serving Calories 35 Calories from Fat 0% Daily Value*Total Fat 0g0% Saturated Fat 0g0% Trans Fat 0gCholesterol 0mg0%Sodium 0mg0%Total Carbohydrate 9g3% Dietary Fiber 0g0% Sugars 0gProtein 0gVitamin A 0% .
