Otoshi-buta, a drop-lid and it is used often in Japanese cooking. These round lids float on top of the liquid in a pot while simmering foods. This ensures that the heat is evenly distributed and reduces the tendency of liquids such as soups, stews and stocks to boil with large bubbles. This reduces the mechanical stress on the food and also it is light enough to keep fragile ingredients in their original shape.
