 This whole grain, hand rolled and sun-dried couscous was prepared from organic Palestinian wheat. The wheat is boiled, sun-dried and cracked, and then hand-rolled in freshly ground wheat flour, steamed, and sun-dried again, all in women-owned cooperatives in the Palestinian Territories. This couscous has a wholesome flavor and firm texture not found with machine made couscous. It keeps best in the refrigerator or for long term storage, in the freezer.
