Conservas Ortiz revives the traditional method of preserving pilchards. We preserve the Sardina Pilchardus variety of pilchards using our fresh and traditional methods. They are cleaned by hand, one by one, and fried in virgin olive oil. Preserved pilchards, like our White tuna, have a flavor which improves with the years, becoming more tender and delicate. As with good wine, our White tuna and pilchard products can be stored in a "cellar", as their quality and flavor improves over time.
